
Ingredients:
- 1 eggplant
- Vegan gnocchi (see the recipe on our website)
- Olive oil
- 2 cloves garlic
- 1 can shredded tomatoes
- 1 tsp sugar
- Fresh basil
- Salt and pepper
Preparation:
Cut the eggplant into cubes. Fry it with olive oil and garlic adding water to soften the eggplant. Add tomatoes, salt, pepper, your favorite seasonings and chopped basil. Simmer till tender. Stir in gnocchi and serve.
