Banana Cake


  • 4 vEGGs Omelette
  • 4 ripe bananas – an additional banana to top of bread is optional
  • 2 ½ cups wheat flour
  • ½ cup sugar
  • 150 ml coconut oil
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ bar grated dark chocolate (optional)


Preheat oven to 180*C. Prepare 4 vEGGs according to package instructions.  Blend sugar with vEGGs until smooth. Add oil and bananas to the vEGGs mixture and blend until smooth. Combine flour, baking soda and baking powder and add to the mixture blending thoroughly until smooth. Stir in the shaved chocolate. Pour mixture into a bread pan and top it with a banana cut lengthwise. Bake at 180°C until toothpick is dry.
